ORGANIC WINE MAY NOT TASTE BETTER, BUT YOU DRINK IT WITH A BETTER CONSCIENCE

Almost from the beginning we opted for organic viticulture, which does not guarantee a better wine, but it does encourage biodiversity in our area and it is there where we on a taily basic can see that our efforts have been worthwhile.

IT’S BETTER TO PREVENT THAN TO CURE

Refraining from the use of conventional methods all our efforts are directed to prevent pests and strengthen the immune system of the strain to make them more resistant. Despite 25 years experience with of organic viticulture this is still a young field we still have a lot to learn. Not having many references, sometimes we do not find answers and we have to invent solutions that are sometimes right and sometimes not.

WILL OZONOTHERAPY BE A UNIVERSAL TREATMENT FOR VITICULTURE?

Being at the forefront, we have to experiment. Our latest bet is the ozone therapy (in the plantation). Recognized for its bactericidal, antiviral and fungicidal action, our hope is that it will also be effective in the vineyard. The result still remains to be seen …

A WINERY WITH ORGANIC CERTIFICATE

Like the vineyard, our winery complies with the regulations of CAECYL (Council of Organic Agriculture in Castilla y León) on the production of organic wine. Once the decision to be respectful towards the environment was taken, with respect to the vineyard, of course, we chose to make our wines based on the same criteria. In an artisanal way, we try to make our wine only by controlling the fermentation and without additions, even in the cleaning of the cellar where we only use ozonated water.
